Oakham Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

This week, Josh has invented a dessert inspired cocktail utilising some classic ingredients and some that will soon become your favourites!

If you have a sweet tooth, but you like it fresh like ice-cream, then the Mango Sundae is for you.

Ingredients: 

  • 50ml spiced rum
  • half a mango
  • handful of ice
  • 15ml lime juice
  • 25ml water
  • cream soda

If you aren't a fan of mango, this will work with any soft fruit, such as pineapple, pear or berries.

Method:

  1. add mango, ice, rum, lime juice and water to a blender
  2. blitz until smooth
  3. pour into a glass - or mug
  4. top with s much cream soda as you like
