UP CLOSE in Oakham: Bianca and Chris Nix of the Ovation wine & Spirit bar

After meeting on superyachts whilst touring the world, looking after every whim of the rich and famous, an Oakham couple are about to open a wine bar.

Chris and Bianca Nix say that after ten years of travelling, working on boats, the pair decided that coming to Rutland seemed like the best option for both and they haven't looked back since.

Bianca, from South Africa, has been in the hospitality industry for almost 20 years and has done everything from waitressing, event management to serving the rich and famous on their yachts.

Chris, from Oakham, has worked in the finance sector, studied business management and on the boats, had the role of captain and/or engineer.

Bianca said: "We have always loved the idea of owning a bar, similar to the ones they used to frequent on their travels, where people can come to relax and enjoy wonderful, local products.

"We have always felt that Oakham was lacking a bar, to have a good glass of wine or a cocktail and a snack in. Oakham has beautiful pubs and some lovely restaurants but no where to just sit with a good glass of vino, after work or before dinner."

And with this thought, Ovation, due to open in the coming weeks, was born.

Bianca explained: "Ovation was created with the idea of bringing people together and giving them a wonderful experience, whether it's trying a new wine, learning about different spirits or just wanting to unwind, for whatever reason.

"We will also be bringing our personal stories and experiences to our guests and sharing with them their knowledge and passion for food, wine and travel.

"Ovation brings something different as it is the perfect "go to" should you just want a light nibble or an after dinner drink.

"It will be the perfect place for a boys whiskey night or for a cocktail get together with the girls.

"And if you need to unwind after work? We have you covered too, a cold beer or glass of wine with a cheese board before you go home can help you do that and for the after dinner folk, that don't quite want to go home yet, white chocolate martinis are on offer or a beautiful dessert wine."

Chris and Bianca say the challenges they faced during the whole process of creating the bar were more than could ever have been expected.

Bianca continued: "From having problems finding funding, because who wants to fund a start up hospitality business in a pandemic, builders letting us down, objections to our planning permission, to challenges with soundproofing, they have definitely had their fair share.

"Fortunately, we have had wonderful people rally round and support us, both in the community, friends and family and we definitely could not have gotten this far without them."

Bianca added: "We want this to be everyone's bar. If you have a recommendation, please let us know. Come in, share your stories and feel truly at home. We can't wait to welcome you very very soon."

Chris and Bianca have created a Crowdfunding page that they would love everyone to get involved in. There are different vouchers up for grabs, should you choose to make a pledge.
