Cocktail of the Week: Caramelised Rum Punch

Oakham Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.
This week's cocktail is a caramelised rum punch. Read on to find out more and how to make it for yourself...
Recipe is as follows:
25ml of spiced rum - I used Spiced Sailor Jerry
25ml dark rum - I used Captain Morgans Dark Rum
25ml of orange liquor - I used Cointreau
75ml of pineapple juice
1 teaspoon of demarea sugar
Method:
- Heat sugar in a pan until it starts to caramelise
- Add all of the above ingredients until warm, not boiling
- Transfer directly into a glass with ice, garnished with a cinnamon stick
- You can burn the cinnamon stick with a blow torch or burner to create a smoky flavour - but be careful!
I put dry ice in the bottom of the glass to create this smoke effect.
