Oakham Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

Josh here, back for more, and I hope you are all looking forward to the Bank Holiday weekend!

This week's cocktail is a Watermelon Daiquiri. The classic Daiquiri is a cocktail whose main ingredients are rum, citrus juice, and sugar or other sweetener, but I made this one up while looking for something a bit more fruity and fresh.

So here we go, my take on a cocktail classic.

The ingredients are:

• 100g Watermelon
• 50ml white rum
• 25ml lime juice
• 10ml simple syurp

Method:

1. Sling all of the ingredients into a blender with ice and blitz
2. Pour into a chilled glass
3. Garnish with watermelon, or a summery cocktail umbrella
4. Enjoy!
