Oakham Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

This week, Josh has created a fresh citrus and mint spritz-style drink.

The Mint Spritz is fresh like a Mojito, but a long drink, inspired by the Aperol Spritz - a popular drink in Italy and one that is packed with citrus flavours.

My take on these two cocktails has created a great tipple for the summer, and although it's getting colder, we can still dream, right?!

Ingredients:

  • 25ml lemon juice
  • 25ml lime juice
  • 25ml trip sec or Cointreau
  • 25ml silver tequila
  • 50ml light white wine
  • topped up with soda water, or lemonade if you prefer

Method:

  1. add the lemon and lime juice, trip sec and tequila into a shaker
  2. add ice and shake to chill
  3. in a tumbler, muddle mint leaves - muddling is where you crush the leaves to release the flavour, and you can do so with a muddler or by crushing thoroughly with the flat of a knife before you put in the glass
  4. add small ice cubes or crushed ice to a tumbler or long line glass - to crush, either put in a heavy-duty blender or in a bag and hit with a rolling pin
  5. strain your cocktail over the ice, and garnish with more mint leaves

Check back next week for another Cocktail of the Week, shared each Friday to get the party started.
