Oakham Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature.

This week, Josh is bringing you a Tropical Sea Foam.

This cocktail was one that I made on a whim with no inspiration taken from one of the classics. These don't always turn out great - it's very much trial and error - but this one was a hit!

Ingredients:

• 50ml pineapple juice
• 50ml orange juice
• 25ml coconut rum
• 25ml dark rum
• 1 egg white or aqua faba from a tin of chickpeas
• drizzle in a splash of grenadine or dark fruit squash for a layer of colour - it should settle at the bottom

Method:

1. add all ingredients apart from the grenadine to a shaker
2. dry shake hard for 15 seconds
3. add ice
4. shake over ice to chill
5. strain into a tumbler
6. drizzle over your grenadine
