An Oakham business owner has cycled 5km at Rutland Water for charity - but not on your average bicycle!

Caroline Stafford has cycled 5km along the shore of Rutland Water on a unicycle.

Caroline, from Oakham's The Kitsch Hen Ice Biscuits, took on a tough 5km unicycle ride for Fro Me to You, a charity that inspires people to write letters to those suffering with cancer.

From Me to You was founded in 2017, when friends Brian and Alison shared their story on BBC Radio 4...

When Brian was diagnosed with bowel cancer in 2010, his friend Alison offered to write letters to cheer him up. Over the next two years, as Brian's cancer moved from stage III to IV, Alison's letters kept on coming.

The letters became part of Brian's recovery process, while Alison discovered a passion for writing she never knew existed.

Brian is now cancer-free, Alison is a writer, and the two have a relationship that only the term 'best friends' can describe. Alison and Brian are now dedicated to getting us all writing letters.

In turn, this inspired Caroline, a passionate Rutland resident and baker, to ride a unicycle - of all things - 5km along the shore of Rutland Water.

On top of this, she was accompanied by a duo of postboxes - of course!

The team at From Me to You celebrate Caroline's success on their social media page: "Our first Community Ambassador and friend to the charity, Caroline from The Kitsch Hen Iced Biscuits, took on a sponsored 5K unicycle ride around Rutland Water to raise money for From Me to You.

"We are absolutely in awe of Caroline's determination and perseverance during her training, as mastering a unicycle for 5 seconds never mind 5 kilometres is SO difficult (take it from us, we tried and failed dismally at the unicycle), and she has stuck with it and not given up."

"She absolutely smashed the ride and also her fundraising target. We are so grateful to all those who came to support Caroline, and would like to say a special thanks to the retired unicycle rider, George, who accompanied her in her challenge."

Congratulations Caroline! Image credit: Nub News.

Caroline has since raised £2,476 - well over her £2,000 target.

See her JustGiving page, which is still accepting donations.
