We have available a brilliant opportunity for an aspiring Sous Chef looking to try out new ideasshow their cooking flare develop their kitchen management skills.

We are looking for a Sous Chef who can work with the team to achieve the hotels longer term food vision & goals. Our ideal candidate would currently hold a Sous Chef or Senior CDP position and have a variety of a la carte experience in Rosette standard restaurants and ideally event catering.

This role would provide the applicant with a great deal of freedom of expression and the main responsibilities for the Sous Chef role would include:

  • Take full command of the kitchen duties and responsibilities in the absence of the Head Chef
  • Taking a lead role in developing & costing the a la carte menu content, food preparation & presentation
  • Taking the lead in the running of the a la carte dinner service meal period, ensure consistency, quality & guest satisfaction with all dishes leaving the kitchen
  • Liaise with the Head Chef on new dishes / recipes and menu content allowing for new trends and popular items
  • Mentor & train the Junior Chefs
  • Assist the Head Chef with weekly ordering of food supplies
  • Work with the Head Chef to forecasting food revenue & production, monitor food purchase prices & purchasing spend to ensure that the food cost target is met
  • Assist the Head Chef with ensuring the completion & compliance with all HACCP documentation, shift checklists & cleaning procedures
  • Take full command of all kitchen duties and responsibilities.

Requirements to apply for our Sous Chef :

  • You must have considerable experience working in a fast paced busy Kitchen establishment
  • You must be hard working and enthusiastic, eager to prepare nothing but the highest quality food for our customers
  • You must have the confidence to deputise for the Head Chef and support more junior team members
  • You must have high standards of cleanliness, stock control, and task prioritisation
  • You must have a thorough understanding of health & safety and food safety guidelines within the kitchen
  • You must have ambition within your career and be willing to develop others.
  • You must be able to communicate clearly and effectively with customers and team members.
  • Excellent leadership skills are key to success in this role. You must be able to motivate team members and maintain a positive attitude with customers.

We passionately believe in our Chef's having a sensible work/life balance and therefore the average hours for the role are 45/week over 5 days.

About the Hotel

The family owned & operated 25 bedroom Wisteria Hotel was taken over by experienced hoteliers Kristy Carey & Chris Newsham in March 2018 & has since then a full renovation of the hotel has been completed. The Wisteria has consistently won a coveted TripAdvisor Travellers Choice award each year putting it in the top 10% of hotels worldwide based on guest feedback. The hotel has an on site restaurant & bar and 5 event rooms which are used for private dining, meetings, weddings & events, which can cater for dinners of up to 80 & parties up to 180. The hotel is located at the top of Oakham High Street (LE15 6HW) in the heart of Rutland, England's smallest county.
